Just to be like everyone else who blogs/eats/uses the internet, I'm rounding up my favorite posts/recipes from 2012. My own posts/recipes, that is.
Clementine Cake: Looking at this makes me remember how good it was. And luckily, it's clementine season again!
Roasted Grapes: This post was linked to by the popular Paleo blog Mark's Daily Apple and gave me probably my biggest traffic day ever.
Strawberry Pudding: Basically I just think this is pretty. Haha.
Kale And Apple Sauté: Kale is good and so is coconut oil.
Roasted Strawberry & Spinach Grilled Goat Cheese: This might be my favorite post of the entire year. I still dream about how good this sandwich was and you can be damn sure it's getting made again just as soon as I can get good in-season strawberries.
Vegan, Gluten-Free Asian Pear & Coconut Crisp: This recipe was featured on Glamour magazine's Vitamin G blog. HOLLA. And I was also quoted in the December issue of Glamour, too! Page 178. I totally forgot to mention that here. Oops!
Other highlights: remember when I did the Three Days of Quinoa challenge (and my questionable bangs)? That was right at the beginning of the year. Here's what I made: Savory Quinoa Cakes, Quinoa as Oatmeal , Spinach and Quinoa Casserole, Pear, Cranberry and Spinach Salad with Quinoa, Cranberry Quinoa Muffins, and Lemony Chickpea Quinoa. Remember when I went to Albuquerque and ate myself silly? Remember when we went Paleo for a week?

Kimberly Southwick shared a cucumber salad, Robert Alan Wendeborn taught us to eat like Popeye, I ate a hell of a lot of Autumn Giles' favorite fudge, Gina Abelkop made Malva pudding and Christopher Newgent gave us a delicious tomato soup. I'm not sure that series is going to live on in 2013, so get your fill while you can!
in 2013, I'm thinking I am going to try out veganism for a month or so. It will be an interesting cooking challenge for me, and I'm interested to see how my body will feel without any meat or dairy. I'm also considering doing a Whole 30, as well.
In a few short days, I'm leaving to do an artist-in-residence program in Truth or Consequences, NM. Yes, that is the town's real name. It's known for its hot springs, so I'm excited to get my soak on while I'm there, writing poems for about two weeks. After that, I'm heading to Las Cruces, the city where I used to live and which I miss, terribly, every day (if you're a longtime reader, you know this about me). I'm doing a reading there at New Mexico State, where I did my MFA, and hopefully I'll have a good time hanging out with old friends and eating lots of green chile and enjoying my time in a sunny, laidback, non-traffic jammed place.
I'll be gone for most of January so I'm not sure if I'll be able to post here on PITI very often; my room at the residency DOES have a kitchen of sorts (I think), but I'm not sure how much or what I will be cooking. I'll definitely be eating a hell of a lot of Mexican food, though, so I'll try to pop in and update y'all on my New Mexican eating adventures (and how the writing is going, too). I will undoubtedly be instagramming the hell out of my trip, so if you'd like to see pictures of the Rio Grande, the desert and other things I think are pretty and interesting, feel free to follow me there.
