I haven't done a "You Should Eat This" in like a year, but I'm doing one now because I love love love love this product and you should too.
Farmer Cheese! It's from Lifeway, the company that also makes kefir. I discovered it a few months ago have since become totally and completely obsessed with it. I'd never heard of farmer cheese before, but when I saw it on the shelves of my local organic grocery store, I was like hey, why not!
I'm so into it. It's kind of like a really really thick, not-as-soft cottage cheese, but also not as sweet. Sorta like ricotta, too, but thick and more spreadable, with an almost hummus-y consistency. Bonus: it has probiotics! Additional bonus: a serving of 2 tbsps is only 30 calories!
Here, I ate it for breakfast with honey, chia seeds and hemp hearts atop a GF waffle:
I also love it with sauteed greens on top of toast or just spread straight on chips. You can easily mix some spices (dill!) into it to create a good dip for a party or a great alternative to mayo or mustard for a sandwich.
Have you ever tried Lifeway farmer cheese or any other kind of farmer cheese? You should, because damn. It's the best new thing in my sncak rotation because it's so versatile, tasty and low-calorie.
